Cranberry Oatmeal Cookies
1½ cups flour
¼ cup shortening
½ cup granulated sugar
1 teaspoon vanilla
1½ cups Jersey Fresh cranberries, dried
1 cup hazelnuts or walnuts, coarsely chopped
½ cup butter
1 cup packed brown sugar
2 Jersey Fresh eggs
2 cups rolled oats

Preheat oven to 375 degrees. In a medium mixing bowl, combine flour, baking powder and baking soda. Set aside. In a large bowl, beat butter and shortening with an electric mixer on medium to high speed for 30 seconds. Add eggs and vanilla. Add brown sugar and granulated sugar; beat well. Stir in remaining flour mixture. Stir in rolled oats, dried cranberries, and chopped nuts. Do not overbeat. Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake 9 - 11 minutes until edges are golden. Makes 4 dozen.
Store in airtight container.
